Silene is both the name of the restaurant run by Roberto Rossi in Tuscany, and the name of the superb extra virgin olive oil that he produces.
- Tasting notes: Artichoke, fresh grass and slight banana aromas with a persistent and harmonious taste. Its golden color rich with brilliant green hues adds to its full character. Acidity is 0.11 (typically Extra Virgin is 0.0 to 1.0). 100% organic.

Mono-Cultivar (single olive variety): Olivastra Seggianese
All olives are hand-picked from this single estate consisting of 700 olive trees on 17 hectares. Each tree is at least 100 years old, first planted by the Benedictine monks around 1300 Tuscany's Monte Amiata.
Olives are small, rounded and juicy and resistent to extreme temperatures. No blending, and selection from first-pressing only gives it the finest quality.
All olives go though “denocciolato” where pits are removed before the oil is extracted, which not only maximizes quality but also gives it a longer natural shelf life and avoids bitterness and impurities.
Immediately filtered and stored in temperature controlled vats of 500 and 1,000 liters.
Il Silene has a velvety, smooth rich mouthfeel that adds dimension and density to other ingredients.

Its primary use is as a finishing oil. Il Silene is used by the finest chefs primarily in cold dishes and on poached fish and chicken. Its secondary use is as a gourmet salad oil.
Healthful properties: Extremely high in polyphenols, Vitamin A and E; high in monounsaturates. High content of oleic acid protects the heart and arteries.
