2006 Riesling

An excellent drinking wine with fine balance, which has a fresh, fruity and delicate peach-pear flavor combined with a palatable crisp acidity. A perfect example of the finest that Canada's distinguished Niagara-on-the-Lake region has to offer.

VINIFICATION:

The cool-climate viticulture conditions are often enhanced by an "Indian summer", a warming in autumn which allows for a later harvest, therefore creating a fine acid balance and natural sugar content in the grape. Morning dew that settles on the grapes gives the wines a soft and fresh character. Only the oldest vines, which are hand picked and three times thinned, help produce these low yielding, high quality wines.

MATURING:

Grapes are given a long, cool fermentation under temperature- controlled conditions in "Rieger" stainless steel tanks.
