Les Salyens Blanc
AOC Côtes du Rhône Village Cairanne
Very light yellow color with hints of gold. First notes show delicate aromas of cut hay, vanilla and hawthorn, opening to reveal white flesh fruits, pear syrup, apricot and honey. Rich and fresh, the palate recalls apple pie, cinnamon and white flowers. With bottle age, the wine develops a rich, honeyed character.
- Wine Spectator: 89 points.
50% Grenache Blanc complemented with Clairette, Bourboulenc, Roussanne, Marsanne, Viognier.
The grapes are exclusively hand-harvested starting with the Grenache Blanc, vinified by direct pressing. The complementary varieties are vinified later, beginning with a one-night-long skin-contact at 17° C, which brings increased complexity. All varieties are settled for juice and lightly fined before fermentation (18°C).
35% of the blend is vinified and aged on fine lees in new French oak barrels for 7 months.
