Deep ruby colour with black tints.
The first nose reveals prunes, blueberries and blackcurrant. After swirling it evolves into notes of tobacco, soft spices (nutmeg, pink pepper) and coffee. The mouth is rich in the beginning and shows remarkable notes of sun-dried tomatoes and spices (pepper) leading to a long lasting finish with delicate & elegant tannins.

50% Grenache, 30% Syrah, 20% Mourvèdre Old bush vine Grenache (over 40 years old).
The grapes are selected from vines over 40 years old and exclusively hand-harvested allowing a first selection on plot. Camille Cayran practices a long traditional vinification (15 days vatting) in order to preserve the expression of terroir. 5% are held in “Cairannaise” carbonic maceration at a high temperature (35°C) on stemmed grapes to enhance the fruit flavour. Fined by egg whites only.
30% of the blend is aged in oak barrels for one year. Kept in bottles for 2 more years in a temperature-controlled cellar before releasing.
"Les Salyens" lived south of Cairanne for over 2000 years, in harmony with their natural environment. Les Salyens is an elegant and aromatic Cairanne (over-ripe fruit, smooth pepper, silky tannins) for connoisseurs.
