Rimarts is a small family winery run by two brothers, Ernest and Ricard; rather than one of the large cava factories which dominate the market with volume and advertising. As an artisanal product, all Rimarts cava is made by traditional methods and by hand. Either Ernest or Ricard is intimately involved with each step of the process. The expert elaboration commences by selecting only the best free run juice from the different grape varietals that go into each blend. Extended aging on the lees for much longer than the legal minimum ensures exceptional smoothness and complexity. Riddling and disgorgement are done entirely by hand without the aid of ice. The hand disgorgement is really something to observe and seldom done anywhere else; Ernest and Ricard have the scars on their hands to prove it. Rimarts is the driest and full-bodied of cavas; genuinely it is own unique category of sparkling wine.
