2007 Chardonnay

Pale yellow color. Pineappple and pear aroma over lemon and vanilla notes. Balanced acidity, good volume in the mouth, and great persistance in which still remain the citric notes. (Dec. 07, ET)

VINIFICATION:

Manual selection of the berries, direct press without destemming, static racking at 10°C, fermentation in barrels, natural stabilizing without the use of fining agents.

Vineyard: Lyre trellis system, 18 year old vines, calcareous vertisol soil.
Production: 46 HL/ha.

MATURING:

Aging during 8 months on its lees in new french oak vats. Blended before bottling with 30% of wine fermented and preserved in stainless steel tanks.
